Chocolate Peppermint Cookies

Get in the holiday spirit and make these delicious, chocolate peppermint cookies!

  • 2 cups
    all purpose flour
  • 1 cup
    cocoa powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 cup
    unsalted butter room temperature
  • 1 1⁄2 cups
    coconut sugar
  • 1 tsp
    pure vanilla extract
  • 2
    eggs
  • 8 oz
    LILY'S White Chocolate Style Peppermint Bar
  • Crushed sugar free candy canes

Directions

In a mixing bowl, mix the flour, cocoa powder, baking soda, and salt. Set aside.

Using a mixer, beat the butter and coconut sugar on high for 2 minutes. Add in vanilla and eggs and beat on high for 1 minute.

Add in dry ingredients. Mix on low. Chill for 40 minutes.

Preheat oven to 350F. Line 2 cookie sheets with parchment paper. Scoop cookies using 1oz cookie scoop.

Bake for 10-14 minutes. Cool cookies completely.

Melt the white chocolate in the microwave in 15 second intervals. Dip the cookies in the chocolate. Top with crushed candy canes.
