Double Chocolate Chip Peppermint Cookies

There is nothing like the smell of fresh baked chocolate chip cookies- especially when they have a peppermint chocolate twist!

  • 1 tbsp
    flax meal
  • 3 tbsps
    warm water
  • 1 cup
    coconut sugar
  • 1 cup
    butter
  • 2 tsps
    vanilla extract
  • 1 tsp
    peppermint extract
  • 1 tsp
    baking soda
  • 2 1⁄4 cups
    all purpose flour
  • 1⁄2 cup
    cocoa powder
  • 1⁄2 tsp
    salt
  • 1 cup

Directions

Preheat oven to 375 degrees.

In a small bowl, beat together the flax meal and water for 1 minute. Place in refrigerator for 5 minutes.

In a large bowl, beat together the sugar and butter.

Mix in the vanilla, peppermint, flax mixture, baking soda, flour, and salt. You can mix by hand or with an electric mixer.

Using a spoon, stir in the chocolate chips.

Scoop dough onto a lightly oiled baking sheet by the tbsp.

Bake for 10 minutes and allow to cool before eating.
