FOR MOUSSE: Melt chocolate and coconut oil over low heat in a double boiler until melted. Set aside.
With a hand mixer, beat egg whites until medium soft peaks form.
With a hand mixer, whip cream until medium hard peaks form.
Whisk egg whites into melted chocolate.
Once combined, fold whipped cream into chocolate mixture 1/3 at a time until combined. Set aside.
FOR WHIPPED FRUIT CREAM: In a medium sauce pan, add fresh fruit.
Add 1/4 C water and cook over med heat until bubbling. With a hand blender, blend until smooth.
With a hand mixer, whip cream into medium hard peaks.
Fold fruit mixture into whipped cream. Set aside.
